While I am fairly good at getting all my training in, I have (continue have, have had forever) issues with my body composition.  I really need to drop about 20 lbs before Ironman Texas. Through QT2, I work with Jaime Windrow who is a Registered Dietician and has her B.S. in nutrition. Like all QT2 athletes I follow the Core Diet and while it works wonders for lots of people, I’m at a bit of a standstill.  I think do what I’m supposed to do and my weight stays the same (or goes up).  Jaime has asked me to be as meticulous and accurate as possible in logging my food over the next two weeks and I thought that if I took pictures of everything that went in my mouth, I’d have a good idea of exactly what I’m eating.

Below is Day One – January 11, 2012.

Breakfast – Decaf coffee, Paleo Krunch Bar and frozen cherries (not pictured):

Morning Snacks (at about 11 a.m.) — Mixed nuts and a Grapefruit

Lunch (at about 2 p.m.) — The Salad — greens, spinach, avocado, cucumber, broccoli, grilled chicken and Brianna’s French Viangrette (best salad dressing ever!)

Late Afternoon (about 5 p.m.) — Turkey burger, goat cheese & broccoli

Dinner (about 8 p.m.) — Chicken Sausage, spinach and pinto beans
